Varietal white dry wine

Varietal composition: Assyrtiko 90% – Malagouzia 10%

Production 2021: 500 bottles

Area – vineyard: Elassona

Winemaking: Carefull selection of grapes in the vineyard as well as quality sorting upon receipt of the grapes in the winery. During white vinification, pre-fermentative cold maceration is applied and then temperature-controlled alcoholic fermentation at 15 – 17 οC.  After the end of the alcoholic fermentation, batonnage is applied for a period of 2 months.

Maturation – ageing: 2 months ageing in French oak barrels 250 L.

Taste: A bright wine, with a pale yellow color and subtle greenish highlights. On the nose we find aromas of mango, orange peel, which are uniquely balanced with aromas of acacia flowers. The mouth, full, oily, cooling, perfectly balanced with the acidity, results in a unique aftertaste.

Sugars: 0.9 g/L

Food pairing: Served cool at 10-12 oC, and harmoniously accompanies grilled fish, cool summer salads, lobster pasta, and shellfish.
