Varietal composition: Xinomavro 65% – Syrah 35%
Production: 2000 bottles
Area – vineyard: Viticultural zone of Naoussa
Winemaking: Carefull selection of grapes in the vineyard as well as quality sorting upon receipt of the grapes in the winery. Pre-fermentation cold maceration is applied during red vinification and then temperature-controlled alcoholic fermentation. This is followed by malolactic fermentation and its ageing in French oak barrels. Bottled unfiltered.
Maturation – ageing: 12 months ageing in French oak barrels 250 L. Reductive ageing in a bottle for 6 months.
Taste: Black-red color with purple highlights. The nose is dominated by aromas of freshly ground pepper, wild berries, leather, discreet vanilla. The full mouth, with velvety tannins dominating the palate, results in a unique long aftertaste.

Food pairing: : Served at room temperature at 18 οC and accompanies wild boar perfectly in the hull, beef fillet and yellow cheeses. It is recommended to do a transfusion and some aeration before serving.
